Simple Butter Cookies
Hi dolls! I finally got around to using my cookie press for the first time this weekend. I used this recipe from Oprah.com, but made a few slight changes. See below!
Ingredients
•24 Tbsp. (3 sticks) salted butter, softened
•1¾ cups granulated sugar
•2 egg yolks
•2 tsp. vanilla extract
•3½ cups all-purpose flour
•Red, pink, orange, or multicolored decorating sugar
(This makes 5-6 batches, I cut everything above in half).
Directions
Active time: 30 minutes
Total time: 1 hour
Preheat oven to 350°. In the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugar until light and fluffy, about 2 minutes. Add yolks and vanilla, beat again to combine, and then beat in flour.
From here, the original recipe from Oprah.com says to roll out the dough into 1 inch rounds. I used my Pampered Chef Cookie Press instead! Since Halloween is quickly approaching, I decided to use the pumpkin insert. I pressed the cookies onto a greased baking sheet.
Bake until cookies are lightly golden around the edges, 10 to 12 minutes. Let rest on baking sheets 2 minutes, then gently transfer to baking racks to cool.
And there you have it! These cookies are so tasty on their own, so I didn't want to overdo them. I sprinkled some colored sugar on top for some simple decoration. I'll definitely use this recipe around Christmas time, they are so versatile and easy to make. The cookie press, on the other hand, is a little tough for me to use. I might just need some more practice!! Hope you guys enjoyed =)

Soft Gingerbread Spice Cookies
Hi friends! It's been a while since I've had the opportunity to bake - I just got married last month! Our wedding was wonderful! Today, I decided to finally get back on the baking horse with these amazing cookies. I got the recipe from dinnervine.com. They are the perfect fall cookie in my opinion! The ginger and clove make these very festive. They are pretty easy to make too. The cookies are so soft on the inside, but have a nice crispy outside. This recipe makes about 3 dozen cookies. Today was also the first time I got to use my awesome Kitchen Aid mixer! See below for recipe and enjoy!
2 1/4 cup flour
2 tsp ground ginger
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp ground cloves
1/4 tsp salt 3/4 cup butter, softened (1.5 sticks)
1 cup baker's sugar
1 egg
1 T water
1/4 cup molasses
1/4 cup white sugar (for rolling dough before baking)
Powdered sugar, for dusting tops of baked cookies
Parchment paper, for lining baking pan

- Preheat oven to 350.
- Prepare large baking sheet with piece of parchment paper to fit.
- In mixing bowl sift dry ingredients: flour, ginger, soda, cinnamon, cloves & salt.
- Whisk dry ingreds well.
- In bowl of electric mixer, cream butter & sugar.
- Beat in egg, then add water and molasses, combine till smooth.
- Gradually add dry flour mix into the wet mixture.
- Transfer dough into smaller metal bowl and place in freezer for about 25-35 minutes (*Consistency of dough is soft set, so chilling dough allows us to make perfect rounds for baking).
- Remove firmed dough from freezer and roll into about 1T size dough balls, in palms of hands.
- Roll to coat each dough ball on a shallow dish with remaining sugar.
- Place sugar covered dough balls on parchment-lined baking sheet.
- Bake 8-10 min, till browned.
- *Cookies will have slight crust on outside, but be soft inside!
- Immediately cool cookies on wire baking rack.
- Once cooled, dust tops of cookies with powdered sugar.
- Store left over cookies in air-tight container, but also stores well in fridge and freezer.
Here they are! So soft inside, crispy on the outside
I don't know how I lived before I had this. I used to use a hand mixer for all baking.

PINK Chocolate Chip Cookies! Photos and Recipe!
They came out so beautiful right?! Ever since joining Pinterest, my life has taken a drastic turn into non-productive land. All I want to do is look up 1000 recipes, and bake them all at once. To say i'm obsessed would pretty much cover it.
I've seen a new fad going around the Pinterest world - pink chocolate chip cookies! I thought it was such an adorable idea, and had to try it out for myself. I just bought Wilton's Food Coloring Gel (below) and could not wait to try them out. They are like food coloring on steroids, seriously. If you want very strong colors, it takes a large amount of food coloring to achieve it. A few drops of this gel and wow! Bright pink, beautiful cookies woohoo!
I found the chocolate chip cookie recipe on Pinterest as well, they are so soft and doughy, I prefer them this way! I used about 3 drops of the pink gel to achieve the bright pink color. Happy baking!
